300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, to serve 10)

To prepare the Syrup: Put all the items in a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, turn off the stove allowing it to reach room temperature entirely. Transfer into a clean bottle, seal and refrigerate it chilled, where it will keep for around four weeks.

Preparing the Premix: Combine every liquids in a sizeable container, let it rest for one hour, then pass it through best through muslin, so it's completely strained.

For serving: Add 85ml from the premix into a stirring glass containing ice, and agitate lightly for a minute to chill. Pour to a frosted cocktail glass or similar, garnish with the cranberries adding the final touch using a quick spritz with the mandarin essence over the drink.
